Note: all temperatures in Fahrenheit; values are volumes of original of hot (above diagonal, 211F) or cold (below diagonal, 45F) water added to achieve a given temperature.

For example, if a brewer had two gallons of 130F mash and wanted to infuse boiling water to achieve a step to 155F, she would add .9 gallons (.45 x 2). She would then have 2.9 g of 155F mash.

Although stepping temperatures down through cold water infusion is a little unusual, the values below the diagonal allow these calculations as well. For example, imagine that cold (45F) water will be added to the hot wort to achieve about 5 gallons of wort at 75F. What temperature should three gallons of boiling wort be chilled to? This problem is best approached by using the formula directly, however the table works well in this example: we want to add two gallons of water or .67 volumes; reading down the 75F column, one finds .67 in the 95F row. Thus the wort should be chilled to 95F and then infused with the 45F water to achieve five gallons of wort at pitching (75F) temperature.
